From Vineyard To Bottle
The wine of Cantine Monfort comes from the best exposed vineyards within the Cembra Valley and from the hills surrounding Lavis, Trento, Mezzocorona, Volano and Isera. Our wines are made following the traditional systems of Trento eonology, which is able to boast centuries of history.
All stages of the winemaking process are followed by the experts of Cantine Monfort. The vintage is particularly selective, the grapes are carefully picked and placed in small cases and taken to "Cantine Monfort" at once, where the delicate process of transformation begins.
Wine-making
The grapes are softly squeezed in order to avoid laceration to the skin and flesh, which gives a delicate quality to the wine.
Fermentation is carried out in stainless steel containers at controlled temperatures. Refining and ageing take place in air conditioned cellars. For some products fermentation and refining are carried out in oak casks.
Bottling
The very last phase, the bottling, is carried out with the use of modern technology, being careful at all times however to ensure that the characteristics of the wine itself remain intact. Particular care has also been dedicated to the packaging. The use of dark glass bottles protects the wine from the negative effects of light, and moreover, care has been taken to make sure that the label and packaging designs match the personality and the original nature of the products.
