In the world of wine Trentino means D.O.C. or the recognition of quality. One high quality Trentino D.O.C. white wine is Pinot Grigio which comes from the French Pinot Gris grape imported into Trentino at the beginning of the 20th century from Germany. Originally the grape and wine were called "Ruländer", using the German name. In Trentino this variety has found its ideal habitat to the extent that this is the biggest area of production of this grape in Italy. The vineyards which cultivate the grape for the Cantine Monfort winery lie at the foot of the hills near Trento and Lavis in an area that is well ventilated and has a sandy soil. Good ventilation is essential for this variety of grape as it helps preserve it in excellent condition right up until the harvest.

Morphological characteristics of the vine

Early shooting; mid flowering; mid colour darkening; maturing end 2nd period (mid September); normal grafting. Leaf small, heart-shaped with three barely discernible lobes. U shaped bend of stalk, slightly closed. Upper leaf surface bright green, bullate, with clear nervations. Under leaf surface light green, arachnoid, downy. Irregular, pointy indentations. Turns yellow-brown in the Autumn Cluster small, cylindrical, at times winged. Extremely compact Grape berries: oval shaped. Characteristic grey colour, similar to Traminer but much smaller, juicy, thin skin, pruinose. Grapeseed 1-2, globular.

Wine-making

After a cold fermentation of approx. 4-6 hours, in stainless steel containers in a completely sealed environment, the grapes undergo traditional white grape wine-making techniques with particular attention being paid to the selection of yeast strains and the supervised temperatures during fermentation. The fine lees are left in contact with the wine for a lengthy period in order to bring out the complexity of the aromas.

Wine

Colour: pale yellow, with copper highlights.
Bouquet: delicate, distinctively fruity, with a hint of ripe pear.
Palate: dry, agreeable, harmonious, with a good structure.

Gastronomic suggestions

Fish and white meats, soups, pasta and risotto dishes with dense sauces as well as egg-based dishes. This is an extremely balanced wine with a special bouquet and is one of the great whites. Thanks to its structure and elegance it can be paired with a variety of dishes. Also excellent as an apéritif.
